Recipe: African Farmers' Market Stew

Serves 4-6


4-6 cups sweet potatoes, cleaned and cubed
1-1/2 cups white onion, cubed
2 tsp garlic, minced
1-1/2 cups red beans or kidney beans
1 cup red bell pepper, cubed
2 cups tomatoes, diced (save some for garnish)
1 tsp cracked black pepper
2 jalapeno peppers, cleaned, seeded, and minced
1 Tbsp ginger, minced
1/2 cup peanut butter whisked with 1/2 cup hot water
2-4 tsp West Indies herb blend
1-1/2 cups vegetable stock
Garnish: chopped peanuts, chive, and tomatoes


In a large crock pot mix all ingredient together and mix all of the vegetables well. Cook for 4-6 hours on low or until tender, stirring occasionally. Serve in bowls and garnish with fresh tomatoes, chives, and chopped peanuts.
